This hand forged Damascus Santoku is made in Miki, Japan at the small family run Misuzu blacksmith shop. The knife has a blade core made of AUS10 steel. The contained carbon and vanadium of this steel allows the knife to reach a hardness of 60 HRC. The blade steel is sheathed by multi-layered stainless steel, and the surface treatment exposes the beautiful Damascus pattern. If you are looking for a medium-sized noble all-purpose knife with low weight, e.g. for the preparation of meat, fish, fruit and vegetables, then this knife will convince you. Especially the low weight of 103 grams counteracts fatigue even with intensive use, yet this chef's knife can be guided very precisely.
This knife is a real eye-catcher and gives a lot of pleasure, it is suitable as a tool for professional chefs as well as for hobby chefs. The traditional wooden handle fits perfectly into the overall look of this knife and completes the design.
