Bunka with exceptional appearance due to the Tsuchime blade fiinish

This hand forged bunka from Matsubara has a special surface - the Tsuchime finish. This surface finish of the blade is concise and makes this knife special. The mantle steel of this blade is hammered with a special anvil developed by Mr. Tanaka, which creates this special texture. In addition to the great look, this surface also has the benefit that the bumps created allow the cut material to detach well from the knife.

Matsubara knives are perfectly balanced and allow for optimal cutting. The core of the blade is made of Blue #2 steel and is brought to approximately 62 HRC. A layer of softer stainless steel is then welded to the core using the San Mai method. The softer stainless steel on the blade blade not only protects the inner steel core, but also adds a degree of dampening to the blade.

This bunka has its center of gravity toward the tip of the blade, so little force is needed when cutting. The knife is comparatively massive at 152 grams, which also makes it very sturdy and robust. It is ideal as an all-purpose knife and can be used for cutting meat and fish just as well as for vegetables and fruit. The tip of the chef's knife can be used for fine cuts on fish and vegetables and allows for precise work. PRODUCT AND CARE INSTRUCTIONS

  • This knife is not suitable for hard cuts such as bones and frozen foods.
  • These knives should never be placed in the dishwasher and must be hand rinsed and dried after each use for long service life.
  • If not properly cared for, these blades tend to rust.
  • In addition, regular treatment with oil is recommended.
  • Since the knives are handmade, each one is unique. This also means that the knives may differ slightly from each other visually.
